Jewish epistemology

Explain Jewish epistemology to me.  Define what epistemology is, then relate it to religion.  Then explain how Jews view the process for discovering religious interpretations.  Finally, explain why this process is so important not only for Jews but for all religions.  In other words, give an example of what might happen if/when it goes wrong.
