Chapter 1-Nutrition and You. 1.1-Defining Nutrition, Health, and Disease Define health, nutrition, nutritional science, dieticians, health triangle, and disease. Explain how eating well can reduce the incidence of chronic illness. Relate this to the health triangle. What is cheaper, prevention or treatment of chronic disease? What is MyPlate? 1.2- What are Nutrients? Define the following (essential) nutrients, phytochemicals, zoochemicals, functional foods, and food quality. Note – essential nutrients are the nutrients that must be consumed because they cannot be made by the body. o Nutrients: Phytochemicals: o Zoochemical: 0 Functional foods: o Food quality: List the 6 groups of nutrients and give the macro and micronutrients. Explain the function of each class of nutrients. List which nutrients provide energy, and which don’t. How are Kilocalories, Calories, and calories related? Explain high-quality food. List the number of Calories we get per gram of macronutrients and apply the values to math problems see Appendix B for math examples. Sample question – A piece of cheese pizza contains 52 grams of carbohydrates, 24 grams of Protein, and 30 grams of fat. How many calories will it contain? What percent of calories come from fat? o Explain nutrient dense vs empty calorie (energy-dense) food and give an example of each. Explain why whole (unprocessed) food is considered to be a higher food quality source. Relate to phytochemicals and zoochemical
